    One of my favorite dishes that I like to make is my banana coconut muffin, which is also known as a banana coconut pancake.

    If you are looking for a delicious snack or quick morning treat, this plantain coconut bake is really easy to make with a few simple ingrediens that you might already have in your pantry.

    This really easy, soft, deliciously puffy does not incorporate any dairy products or flour!

    As most of you know, I prefer the blue can of coconut. I feel like it has a mix between the milk and cream, so if I ever need to have coconut milk/cream on hand, this has proved to be the best to storing and random recipe usage.

    Plantains have a little less sugar than regular bananas we are all known to eat. Plantains are generally larger than bananas. In this recipe, the dryer texture  of the Plantain as compared to regular bananas which are smooth and creamy, I believe that plantains will also provide the texture needed.

    Tips and Tricks Before Making Authentic Lao Coconut and Plantain Bake

    If you are making this dish without plantains and using bananas instead, you may want to cut down on the amount of sugar you add into the recipe as bananas are much sweeter.

    How to Make Authentic Lao Coconut Bake with Plantains

    Ingredients

    • 14.5 ounces of coconut cream
    • 4 large plantain, mashed
    • 4 tablespoons of granulated sugar

    Instructions

    • Preheat oven to 350 degrees.
    • Mash the plantains until it has a paste consistency.
    • Mix togher the coconut cream and granulated sugar. Mix well.
    • Add muffin liners to muffin pan.
    • Fill the mixture into muffin pan.
    • Bake for 45 minutes until baked all the way through.

    The muffins can be stored int the refridgerator for up to 3 days (and heated again for 20 seconds in the microwave).

    Can I use coconut cream in place of coconut milk (or vice versa)?

    You can use coconut cream in place of coconut milk as long as you are okay with not experiencing the richness of what coconut cream provides. With either, you will still get the flavor of coconut.

    Regular bananas can be used as a substitute for plantains. For this recipe, you will want to reduce the amount of sugar to balance the sweetness that regular banana brings to the recipe.
